This recipe makes a full quart size mason jar full, keep on hand for every seasoning occasion, for 1 packet of Zesty Italian Seasoning there is 2 TBSP of the mix.
To make the Italian dressing, whisk together 2/3 cup canola oil, 1/4 cup white vinegar, 2 tablespoons water, and 2 tablespoons dry Italian dressing mix in a bowl.
Whisk all the ingredients until combined. Serve immediately or store covered in the refrigerator up to 1 week.

Potato Wedges or Fries
These crispy, flavorful potato wedges are parboiled, dried, and oven-baked for the perfect golden-brown crunch. Coated in olive oil and your homemade Zesty Italian Seasoning, they’re packed with bold, savory flavor in every bite.
Ingredients:

4 large russet potatoes, cut into wedges (or thick-cut French fries)

Water (for boiling)

3 tablespoons olive oil

2 tablespoons Zesty Italian Seasoning (or more to taste)
Instructions:

Fill a large pot with water and bring it to a rolling boil over high heat. Carefully add the potato wedges and let them boil for 7 minutes—this helps them cook evenly and develop a soft, fluffy interior.

Drain the potatoes immediately and spread them out on a paper towel-lined baking sheet. Let them air-dry for a few minutes, then pat them dry with paper towels. Removing excess moisture helps them crisp up beautifully in the oven.

Transfer the dried wedges to a large mixing bowl. Drizzle with olive oil and toss until evenly coated. Sprinkle Zesty Italian Seasoning generously over the potatoes, making sure each wedge is well-seasoned.
