Shitake Mushroom and Onions with Beef Rice

Sauteed Mushroom and Onions Beef Rice

This Shiitake Mushroom Beef Rice Stir-Fry is incredible!  it's  great as a side dish or an easy dinner recipe,  For a side dish you can "chop" the mushrooms and onions in a food processor and mix it in with the rice. It was created with hoisin sauce and beef broth, but the hoisin sauce brings it over the top. This would be easy for make ahead meals, or freezer meals. I know for me, this is one recipe I want to keep on hand, and after making it, I am sure you will too!

You Will Need

4 TBSP Butter (more if needed)
2 TBSP Vegetable Oil

2 Cups Shiitake Mushrooms (whole)

1 Medium Onion (quartered twice)

1 Cup Sushi Rice

1/4 tsp Chinese 5 spice

1 1/2 cup Beef Broth (OR) 1 1/2 Cups water and 2 beef bullion cubes.

1/4 Cup Hoisin Sauce

1/4 tsp pepper

1 1/2 tsp salt (divided)

Start by boiling water, measure out 2 cups shiitake mushrooms and place in a bowl, Once your water starts to boil, pour over mushrooms and let soak a couple of hours.  (it would be ideal to start these in the morning) You "can" soak them up to 24 hours in advance.

Place bowl in a large zip lock bag to keep the heat and steam in. When done, drain water  and gently press excess water out of mushrooms. Slice thin, and set aside. Learn all about rehydrating Shiitake Mushrooms here, and where to buy them.

Beef Rice Shiitake Mushrooms

Add beef broth and Chinese 5 spice to rice, soak for 15 minutes, bring to a light boil, turn heat down and simmer for 20 minutes covered. Once 20 minutes have passed remove from heat and let rest an additional 15 minutes.  I was out of beef broth so I substituted 2 bullion cubes with 1 and 1/2 Cup Water. Once rice is done add 1/2 tsp salt and 2 TBSP butter. Fluff with fork and set aside.

Add 2 Tbsp oil and  2 Tbsp butter (more if needed)  to large frying panQuarter Onion twice, making 8 wedges, add  mushrooms and onions to your pan 1 tsp salt and 1/4 tsp pepper, Stir fry until onions are half way translucent.  (mix in Hoisin Sauce) stir to combine.  Cover with lid stirring regularly until onions are as you like them.

When vegetables are done, add them over the rice. You can stop here or do what I did (which was heavenly.) I got my food processor out, and set the setting on Chopped, chopped up the mushrooms and onions and mixed in with the rice to eat, and this is now my favorite rice recipe.  I had this for breakfast trying to get this recipe up it was delicious.  I thought about scrambling an egg to add with it. I may do that next time, I honestly liked this more then fried rice, I will be adding it to my weekly recipes, it's that good, it really is, and it's super easy!!
