How do you make The Best Minestrone Soup with Sausage?


Recipe Instructions:


  1. Brown the Sausage: In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Add the sausage and cook until browned, breaking it up with a spoon as it cooks. Once browned, transfer the sausage to a plate using a slotted spoon, leaving the fat in the pot.

  2. Sauté Vegetables: Add the remaining 1 tablespoon of olive oil to the pot. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and cook for another 1 minute.

  3. Add Vegetables: Stir in the frozen sliced carrots, diced zucchini, and diced potato. Sauté for about 5-7 minutes until the vegetables begin to soften.

  4. Add Tomatoes and Seasonings: Return the browned sausage to the pot. Add the canned diced tomatoes (with their juice), dried thyme, dried basil, salt, and pepper. Stir well to combine.

  5. Pour in Beef Broth: Pour in the beef broth and stir to combine. Bring the mixture to a boil.

  6. Simmer: Once boiling, reduce the heat to a simmer and let the soup cook for about 20 minutes, or until the vegetables are tender.

  7. Add Beans and Pasta: Add the drained and rinsed red kidney beans, canned green beans, and small pasta to the pot. Stir to combine and let the soup simmer for an additional 10 minutes (for al dente) or until pasta has reached your desired doneness.

  8. Finish with Fresh Basil: Stir in the chopped fresh basil leaves and allow the soup to simmer for another 2-3 minutes.

  9. Adjust Seasoning: Taste the soup and adjust the seasoning with more salt and pepper if needed.
