Teriyaki Chicken Stir-Fry with Rice
Ingredients:
For Teriyaki Chicken:
1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces 🍗
1/2 cup soy sauce 🥢
1/4 cup honey 🍯
2 tablespoons rice vinegar 🍚
2 cloves garlic, minced 🧄
1 teaspoon ginger, grated 🧡
1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening) 🌽
Sesame seeds and green onions for garnish (optional) 🌱
For Stir-Fry:
2 cups cooked rice (white or brown) 🍚
1 cup green beans, trimmed and halved 🥦
1 cup carrots, julienned or sliced 🥕
2 tablespoons vegetable oil 🌿
Instructions:
Prepare the Teriyaki Sauce:
In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, and grated ginger. 🥢🍯
Marinate the Chicken:
Place the chicken pieces in a bowl and pour half of the teriyaki sauce over them. Let it marinate for at least 15-20 minutes. ⏰
Cook the Rice:
Cook the rice according to package instructions and set aside. 🍚
Stir-Fry the Vegetables:
Heat vegetable oil in a large pan or wok over medium-high heat.
Add green beans and carrots to the pan and stir-fry for 3-4 minutes until they are slightly tender but still crisp. 🥦🥕
Cook the Chicken:
Remove the chicken from the marinade and add it to the pan with vegetables. Cook for 5-7 minutes or until the chicken is fully cooked. 🍗
Add Teriyaki Sauce:
🥢Pour the remaining teriyaki sauce over the chicken and vegetables. Stir to coat evenly.
Thicken the Sauce:
In a small bowl, mix cornstarch with water. Add this mixture to the pan and stir until the sauce thickens. 🌽
Serve:
Serve the Teriyaki Chicken Stir-Fry over cooked rice.
Garnish with sesame seeds and chopped green onions if desired. 🌱🍽️
