1 lb (450g) ground beef
1 tablespoon olive oil
1 small onion, diced
1 bell pepper, diced (any color you prefer)
3 cloves garlic, minced
3 cups beef broth (for fully cooked pasta) or 2 cups beef broth (for al dente pasta)
1 (14.5 oz) can diced tomatoes, undrained
2 cups uncooked elbow macaroni or pasta of your choice
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon cumin
Chopped fresh parsley for garnish (optional)

One Pot Beef Mac & Cheese Skillet Instructions:
Prep Ground Beef:
Season the ground beef with salt and pepper. In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the seasoned ground beef and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
Drain Excess Fat:
Once the beef is browned, drain excess fat if needed.
Cook Aromatics:
Add diced onion and diced bell pepper to the skillet with the beef. Cook until the vegetables are softened, about 3-4 minutes.
Add Garlic:
Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
Seasonings:
Sprinkle paprika, chili powder, cumin, salt, and pepper over the beef and vegetables. Stir well to coat everything evenly.
Add Broth and Tomatoes:
Pour in the beef broth and diced tomatoes with their juices. Bring the mixture to a simmer.
Add Pasta:
Stir in the uncooked elbow macaroni or pasta of your choice. Make sure the pasta is submerged in the liquid.
Simmer:
Bring to a boil, reduce the heat to medium-low and cover the skillet. Let the mixture simmer for about 30 minutes (if using 3 cups of broth for fully cooked pasta) or 15 minutes (if using 2 cups of broth for al dente pasta), stirring occasionally, or until most of the liquid is absorbed and the pasta reaches your desired doneness.
Cheesy Finish:
Once the pasta is cooked to your desired doneness, remove the skillet from heat. Stir in the shredded cheddar cheese until melted and well combined.
Serve:
Garnish with chopped fresh parsley if desired. Serve hot
