How to Make Easy Oven-Baked Cheesy Beef and Potato Casserole


Preheat Oven: 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or cooking spray.

Boil Potatoes: 

Bring a large pot of salted water to a boil. Add sliced potatoes and cook for 5-7 minutes until just starting to soften. Drain and set aside.

Cook Ground Beef: 

In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat and set aside.

Prepare Sauce:

 In the same skillet, melt butter over medium heat. Add chopped onion and garlic, sauté until softened and fragrant. Sprinkle flour over the mixture and stir to combine, cooking for about 1 minute.

Add Liquids: 

Dissolve beef bouillon cubes in 1 cup of water. Gradually pour this mixture and heavy cream into the skillet, stirring constantly until the sauce thickens slightly, about 2-3 minutes. Season with salt, pepper, and dried thyme.

Layering: 

Spread half of the boiled potato slices evenly in the prepared baking dish. Sprinkle 1 cup of Fiesta cheese blend over the potatoes. Spread half of the browned ground beef over the cheese layer. Pour half of the sauce evenly over the beef and potatoes.

Repeat:

 Repeat the layering with the remaining potatoes, ground beef, and sauce.

Bake: 

Cover the baking dish with foil and bake in the preheated oven for 50-55 minutes, or until potatoes are tender when pierced with a fork.

Final Cheese Layer: 

Remove the foil and sprinkle the remaining 1/2 cup of Fiesta cheese blend evenly over the top of the casserole. Bake, uncovered, for an additional 10-15 minutes, or until the cheese is melted and golden brown.

Serve:
