​Porcupine Meatballs

The Meatballs

  • 2 Pounds Hamburger

  • 2 Cups Bread Crumbs

  • 3 Eggs

  • 2 Cups Long Grain Rice

  • 1 Medium Onion (Diced Very Small)​

  • 2 TS Minced Garlic

  • 1 TS Onion Powder

  • 1/4 TS Black Pepper

  • 1 TS Garlic Salt

  • 2 TS Italian Seasoning

  • 1 TS Parsley

The Sauce

  • 2 Cans Tomato Soup 

  • 1/2 Can Water

       (Tomato Soup Can)

  • 1 8 OZ Can Tomato Sauce 

  • 1 TS Garlic

  • 1 TS Italian Seasoning

  • 1/4 Black Pepper

  • 1/4 Salt

  • 1 TS Onion Powder

Porcupine Meatballs is a dish made with rich tomato sauce,  and rice, with a bold flavor and incredibly good. Serve over rice or noodles with a side salad. The taste is incredible. A great recipe to double and store in the freezer for later. It's wonderful comfort food, you could even serve this over fried cabbage.  You can use beef, pork, ground turkey, whatever meat you prefer.  I do hope you give this one a try and I just know you will love it!

What can you serve with old fashion, home made porcupine Meatballs?

My personal preference is to serve these porcupine meatballs over rice, but they are delicious served over mashed potatoes or with a side of easy oven roasted potatoes as well. You can even serve these home made, delicious porcupine meatballs over pasta, and serve your favorite bread, a good crusty bread is best. You could also serve these with cheese, All you have to do is layer them in a casserole dish with sauce and add a cup of more of cheese delish!~ These would also make a delicious meat ball sandwiches on hoagies! Top with your favorite cheese YUM~ So many dinner or lunch ideas. (Recipe below)... We make our porcupine meatballs with tomato soup.

Instant Pot Directions

  • Start by mixing all your ingredients for your meatballs,

  • Mix well.

  • Roll into medium-sized balls.

  • Add your sauce ingredients to your instant pot.

  • Place your meatballs into your sauce, you can stack them they will cook evenly.

  • Place your lid on, set to sealing and not venting, Press manual high pressure for 18 min.

  • Natural release for 10 min. Then instant release. Always open your pot away from you to prevent burns. 

Stove Top Directions

  • Cook sauce on the stove top,

  • Pour over meatballs 

  • Bake at 350 for  45 min to 1 hour (or until done) move to serving dish and enjoy!

  • Serve over rice or pasta
