Garlic Parmesan Potato Balls

These potato balls are so good, loaded with mashed potatoes and cheese. This recipe makes 15 mashed potato balls. (Croquettes) You can use them as appetizers by inserting a tooth pic in each one. You can make a large batch for a big crowd, or this smaller one for 2 or 3. It's so easy you can use your own left over mashed potatoes or the recipe provided for them. Except the time to refrigerate the mashed potatoes this recipe is quite fast, and you can make a lot at one time. Just double the recipe or even tipple it for a large party or crowd.
You will Need:
You can also used left over mashed potatoes

3 medium potatoes
2 Eggs -
2 TBSP Butter

3/4 cup Fiesta Cheese

1/4 Cup Milk
-
1 1/2 tsp Garlic Salt
-
1/4 tsp Pepper
-
1 Cup Bread Crumbs
-
2 TBSP Garlic Parmesan Seasoning

1/4 Cup Sour cream
-
1 TBSP parmesan cheese

Start by making mashed potatoes (or skip this step and use leftover mashed potatoes)
Peel and cut potatoes into chunks boil until you can poke a knife easily through them. Drain and add butter, milk, garlic salt, pepper, fiesta cheese, mash with potato masher or whisk until blended.
Drain water from potatoes and move to a bowl, add garlic parmesan seasoning, sour cream, butter and milk. Mix well. Salt and Pepper to taste. Cover and refrigerate until completely cold.
Add in eggs and mix until well blended.
Stove top Directions for boiling potatoes.
Place bread crumbs in a bowl, add shredded parmesan cheese salt and pepper and mix well. I used a cookie scoop to make the same size balls. Drop one at a time into the bread crumbs, form balls, and deep fry until crispy and golden brown.
For the Sour cream I used 1/4 cup sour cream, 1 TBSP grated parmesan cheese. Salt and Pepper to taste. I also used 1 tsp garlic parmesan seasoning. This can easily be doubled or tripled
This will make 15 balls total
