One Pot Taco Mac and Cheese is the perfect blend of seasoned Taco ground turkey OR ground beef, pasta, cheese and your favorite taco toppings all rolled into one fantastic dish. It’s fast, easy and ready in under 30 minutes!

You Will Need

2 Pounds Taco Ground Turkey (or Plain Hamburger)

1 med/lg Onion (diced)

6 1/2 cups water (divided)

1 1/2 Cup Macaroni Noodles

1 tsp Salt 

1/2 tsp Pepper

2 Cups Shredded Fiesta Cheese

2 Packets Taco Seasoning

1 can Rotel
1 Can Black Beans

Optional-

Diced Cherry Tomatoes

Sour Cream

Tortilla Chips

Green Onions (diced white and green)

Extra Cheese

What Goes Well With Taco Macaroni and Cheese?

One pot meals are perfect for busy families,  large crowds, or even easy potluck  Dinners.  They cook in under 30 minutes and use just one pan for easy clean-up. This One Pot Taco Mac and Cheese recipe has the perfect blend of spices and cheesy pasta goodness. It’s a one dish wonder that your whole family is sure to love.

Directions

Start by adding frozen Taco Ground Turkey to your instant pot with 1 cup water. Set your timer for 15 minutes high pressure with an instant release. (drain and set aside.)

Turn your sauté On, Dice Onion, Add salt and pepper, cook until onions are barely cooked through.  1 to 2 minutes.

Add Macaroni and 4 cups water, select high pressure for 10 minutes with an instant release. (drain)

Add 2 Packets Taco Seasoning, 1 1/2 cup water, 2 cups cheddar cheese, Rotel tomatoes, sauteed onions, black beans and mix well, Turn on Sauté and stir until thickened and water is almost gone. .  Add to bowls and top with cheese diced cherry tomatoes, green onions, sour cream and extra cheese Enjoy!~

Variations

Spicy: Bring the heat by adding a can of diced jalapenos, a  pinch or two of cayenne pepper will also turn up the heat.

Make It Deluxe: Top with crushed tortilla chips, shredded lettuce, diced tomatoes, and sour cream.

This is a full and complete meal in one, so you could really just serve it on its own it would be fine for four to six people.
