You Will Need
Baked tilapia is a weeknight dinner we keep in our weekly rotation. The fish, which has a very mild taste, is baked in butter with lemon pepper and comes out with a nice crispiness with a tender inside. It cooks quickly and takes on flavors well. This recipe is so simple, we guarantee you'll be in and out of the kitchen in under 15 minutes! Unless your frying potatoes to go with them!

Directions
Lay tilapia out on a cookie sheet lined with foil. Add butter on top of each piece of fish
To a small bowl add lemon pepper and salt (mix well) Sprinkle on both sides of tilapia and coat evenly. Turn each piece of fish so the butter is "under" the fish. Fold the thin belly meat beneath the fillet.

Know Your Fish – Know the source of your tilapia. Grocers such as Costco, Kroger and Walmart all carry responsibly farmed Tilapia from producers such as Regal Springs. If you are unsure where they come from, ask at the the butcher in the meat department because most places list their fish source.

To minimize the fishes natural smell, you may soak the tilapia fillets in salted ice water or rub the fish lightly with lemon.
