Eskridge sausage

You Will Need:
1 Package Eskridge Sausage
2 TBSP Butter
2 TBSP oil (I used olive)
1 1/2 TBSP Minced Garlic
1 Medium Yellow Squash (sliced)
1 Medium Zucchini (sliced)
6 to 8 Mini Sweet Bell Peppers
1 Medium Onion (cut in half then sliced)
1 TBSP Roasted Garlic and Herb Seasoning
1/2 TBSP onion powder
1 tsp Salt
1/2 tsp Pepper
For The Rice
1 1/2 cup Sushi Rice (sticky rice)
1/4 cup Rice Vinegar
Salt and Pepper (optional)
Cook Rice according to package directions, add rice vinegar and salt and pepper.

This is one of those easy, quick dinners to get on the table fast. Great to serve by itself or with rice or pasta. This recipe is healthy and delicious! The best of both worlds.
Directions
Start by slicing sausage, onion, sweet bell peppers, yellow squash and zucchini and spices.
Add Butter and Oil to your pan with minced garlic (let cook a few min) do not brown.
Cover and simmer for 25 minutes until veggies are firm, but soft. Stirring occasionally.
Transfer to a sheet pan and broil for 6 to 8 minutes.
Although I prefer Beef or Pork Eskridge sausage, you can also make this recipe using turkey and Italian or beef Sausage . All are great. In fact you can mix it up, Use some of each to get a great tasting dish your whole family will love. Eskridge sausage is great with fried potatoes and onions. YUM~!
