You Will Need

  • 4 Chicken thighs (you can also use Chicken breast)

  • 2 TBS olive oil

  • 2 TBS Italian Seasoning Mixture

  • 1/3 Cup Soy Sauce

  • 1 Cup Brown Sugar

  • 1 TBS Minced Garlic

  • 1/4 Cup Bourbon

  • 2 TBS Ketchup

  • 1/2 Cup Water

  • 1 TBS Jalapenos (or 1/4 tsp Red Pepper Flakes)

  • 1/4 Cup Apple Cider Vinegar

  • 2 TBS Corn Starch

  • 2 TBS Water

Sautéing the Chicken:

  • Start by putting olive oil into your Instant Pot.

  • Turn on the sauté function and let the Instant Pot heat up.

  • Coat the chicken with 2 TBS Italian Seasoning Mixture.

  • Lightly brown the chicken on both sides in the heated olive oil.

Preparation:

  • Midway through sautéing, empty any excess water out of the Instant Pot. It's okay, as it will help deglaze the pot later.

  • Once the chicken is browned on both sides, remove it from the Instant Pot and set it aside on a plate.

Creating the Glaze:

  • In the same Instant Pot, add soy sauce, brown sugar, minced garlic, bourbon, ketchup, 1/2 cup water, jalapenos (or red pepper flakes), and apple cider vinegar.

  • Mix the ingredients well to combine.

Cooking the Chicken:

  • Return the browned chicken to the Instant Pot, making sure each piece is covered with the liquid mixture.

Pressure Cooking:

  • Place the lid on the Instant Pot, ensuring that the valve is set to the "Sealing" position.

  • Press the "Manual" or "Pressure Cook" button, and set the timer for 20 minutes on high pressure.

  • Releasing Pressure:

  • Once the cooking time is up and the pressure valve goes down (indicating that pressure has released), carefully turn the lid to open.

Finishing the Glaze:

  • Remove the chicken from the Instant Pot and place it on another platter.

Thickening the Glaze:

  • Add 2 TBS Corn Starch to 2 TBS water in a small bowl and stir until the mixture forms a smooth slurry.

  • Stir the corn starch slurry into the liquid in the Instant Pot to thicken the glaze. Use the sauté function and stir until the glaze reaches the desired thickness.

Serving:

  • Serve the glazed chicken over Cilantro Buttered rice or your preferred choice of side dish.

  • For an extra kick of heat, you can add additional red pepper flakes, sriracha sauce, or paprika to the glaze before serving.

Stove Top Bourbon Chicken

  1. Searing the Chicken:

    • In a large skillet, heat the olive oil over medium-high heat.

    • Coat the chicken with 2 TBS Zesty Italian Seasoning Mixture.

    • Place the chicken in the skillet and sear for about 2-3 minutes on each side until they are lightly browned. Remove the chicken from the skillet and set aside.

  2. Creating the Glaze:

    • In the same skillet, add soy sauce, brown sugar, minced garlic, bourbon, ketchup, 1/2 cup water, jalapenos (or red pepper flakes), and apple cider vinegar.

    • Mix the ingredients well to combine.

  3. Cooking the Chicken in the Glaze:

    • Return the seared chicken to the skillet, making sure each piece is coated with the glaze.

  4. Simmering the Chicken:

    • Reduce the heat to medium-low and let the chicken simmer in the glaze for about 20-25 minutes, turning the chicken occasionally to ensure even coating and cooking.

  5. Thickening the Glaze:

    • In a small bowl, mix 2 TBS Corn Starch with 2 TBS water to create a slurry.

    • Push the chicken to one side of the skillet and pour the corn starch slurry into the glaze.

    • Stir the glaze continuously as it simmers and thickens, creating a glossy sauce.

  6. Serving:

    • Once the chicken is cooked through and the glaze has thickened, remove the skillet from the heat.

    • Serve the Bourbon Glazed Chicken over your choice of side, such as Cilantro Buttered rice or mashed potatoes.

  • If you prefer a spicier dish, you can add extra red pepper flakes, sriracha sauce, or paprika to the glaze during step 2.

Can I use the Instant Pot's "Pressure Cook" button directly, or do I need to manually adjust the time? 

You can use the "Pressure Cook" button directly and adjust the time to 20 minutes using the Instant Pot's controls.

Can I prepare the glaze ahead of time? 

While it's best to cook the glaze and chicken together for optimal flavor, you can prepare the glaze in advance and refrigerate it. When ready to cook, bring the glaze to room temperature and follow the instructions from step 4.
