You Will Need

  • 7 quartered Russet or Red Potatoes

  • 1 stick (1/2 cup) butter

  • 1 heaping teaspoon squeezable Italian herbs (or dry Italian seasoning)

  • 1 heaping teaspoon squeezable basil (or dry basil)

  • 2 heaping teaspoons minced garlic

  • 1 teaspoon onion powder

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • 1 cup bone broth (substitute with chicken or beef broth)

  • 1/2 to 1 cup shredded Parmesan cheese (I used 3/4 cup)

How to make
Instant Pot Garlic Roasted Potatoes

  1. Turn on your Instant Pot's "Saute" function and allow it to heat up.

  2. Add the stick of butter, Italian herbs, basil, and minced garlic to the Instant Pot. Once the pot is hot, turn off the "Saute" function and let the butter melt while incorporating the spices.

  3. Add the quartered red potatoes, onion powder, black pepper, salt, and bone broth to the Instant Pot. Mix well to coat the potatoes with the herb-infused butter.

  4. Place the lid on the Instant Pot, ensuring it's set to the "Sealing" position.

  5. Press the "Manual" or "Pressure Cook" button and set the timer to 10 minutes at high pressure. Once the cooking cycle is complete, perform a quick pressure release by carefully turning the steam release valve to the "Venting" position.

  6. Use a slotted spoon to transfer the cooked potatoes to a baking dish. Arrange them in an even layer.

  7. Sprinkle 1/2 to 1 cup of shredded Parmesan cheese over the potatoes, covering them evenly.

  8. Preheat your oven's broiler.

  9. Place the baking dish with the potatoes and cheese under the broiler for 2 to 3 minutes, or until the cheese is melted and slightly browned. Keep a close eye on them to prevent burning.
