Sausage, Egg and Cheese Breakfast Casserole

Butterfly

Prepare the Sausage:

  • In a skillet over medium heat, cook the breakfast sausage, breaking it apart as it browns. Once fully cooked, drain any excess grease. Set the sausage aside.

Prepare the Egg Mixture:

  • Whisk the eggs, salt, and black pepper together in a bowl until fully combined.

Assemble the Casserole:

  • Layer the torn tortillas, cooked sausage, and shredded cheese in the baking dish.

  • Pour the egg mixture over everything, then drizzle the heavy cream on top.

Bake the Casserole:

Place the casserole in the preheated oven and bake for 25–30 minutes, or until the eggs are set and the top is golden and bubbly.

Serve:

  • Allow the casserole to cool for a few minutes before serving. Top with salsa and sour cream for added flavor and a beautiful finish.
