Begin by cutting the strawberries into 1-inch rounds and then halve them. Place the strawberries in a bowl, add 1/4 cup of sugar and lemon juice, and mix well. Cover the bowl and let it sit for 1 hour, stirring occasionally to allow the strawberries to release their juices.

After the strawberries have macerated, transfer the mixture into your Instant Pot. Put on the lid and make sure it's set to sealing, not venting.

Press the steam button (or rice cook button) on your Instant Pot and set the timer for 10 minutes. Once the cooking cycle is complete, perform an instant release to release the pressure.

Carefully open the Instant Pot lid and add 1/2 teaspoon of vanilla extract and the softened cream cheese to the strawberries. Mix well until the cream cheese is fully incorporated and the mixture is smooth.

In a separate bowl, combine 1 teaspoon of corn starch with 1 teaspoon of water, stirring until the corn starch is fully dissolved.

In another bowl, mix 1/2 tablespoon of cinnamon with 3 tablespoons of sugar to create a cinnamon-sugar mixture.

Add 1 tablespoon of the cinnamon-sugar mixture and the dissolved corn starch mixture to the Instant Pot. Stir well to combine.

Finally, add 1 teaspoon of lemon extract and 1/2 cup of heavy cream to the mixture in the Instant Pot. Stir continuously until the mixture is well blended and has thickened.
