You Will Need

For the Marinade:

1/2 cup Olive Oil

1/2 cup Sherry (or Chicken Broth)

1 TBSP Thyme

2 tsp paprika

1 1/2 tsp Salt

1 tsp Pepper

For the Chicken:

8  chicken thighs/legs mixed (cut) You can also use chicken Breast.

2 Cups Chicken Broth (Divided)

1 Cup Water

1/4 tsp Browning Seasoning

1 1/2 tsp Salt

1 tsp Pepper

Thickener-

2 Heaping TBSP  Corn Starch

2 1/2 TBSP Water

1 Cup Cream

Note: for thicker gravy use 3 Tbsp corn starch and 3 tbsp water.

Instant Pot Chicken
With Onions and 
Mushroom Gravy

Prepare the Chicken:

  • a. If using chicken thighs/legs, cut them apart. Tip: They are easier to cut when half frozen. If using chicken breasts, skip this step.

Marinate the Chicken:

  • a. In a large bowl, combine olive oil, sherry, thyme, paprika, salt, and pepper. Mix well.

  • b. Add the chicken pieces to the marinade, ensuring they are well coated. Set aside to marinate while you prepare the Instant Pot.

Brown the Chicken:

  • a. Set your Instant Pot to the "Saute" function. When it's hot, add the chicken pieces (about 4 at a time) to the pot, browning them on both sides for about 5-6 minutes per side. Remove the browned chicken to a large plate and set it aside.

Sauté Onions and Mushrooms:

  • a. In the Instant Pot, add diced onions, drained mushrooms, and minced garlic. Sauté until the onions become translucent. Remove this mixture from the Instant Pot and set it aside.

Pressure Cook the Chicken:

  • a. Return the browned chicken pieces to the Instant Pot. Add half of the chicken broth.

  • b. Place the lid on the Instant Pot, set the valve to "Sealing," and pressure cook on high for 25 minutes with a quick release.

Create the Gravy:

  • a. Once the pressure is released, open the Instant Pot and turn on the "Saute" function again.

  • b. Add 1 cup of water, the browning seasoning, salt, and pepper. Mix well.

  • c. In a small bowl, make a corn starch slurry by mixing the corn starch and water until smooth. Stir this slurry into the Instant Pot to thicken the gravy. Adjust the thickness as desired. For a thicker gravy, use 3 Tbsp corn starch and 3 Tbsp water.

  • Remove the inner pot from the Instant Pot and stir in 1 cup of cream. Season with salt and pepper to taste.

Serve and Enjoy:

  • Serve the Instant Pot Chicken With Onions and Mushroom Gravy over cooked rice, mashed potatoes, or noodles.

  • Garnish with fresh thyme or parsley for added flavor and a beautiful presentation.

Baked Chicken
With Onions and 
Mushroom Gravy

Marinate the Chicken:

  •  In a large bowl, combine olive oil, sherry, thyme, paprika, salt, and pepper. Mix well.

  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, but ideally 2 hours for the best flavor.

Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

  • Brown the Chicken:

  • Heat a large oven-safe skillet or a Dutch oven over medium-high heat on the stovetop.

  • Remove the chicken from the marinade, allowing excess marinade to drip off.

  • Place the chicken in the hot skillet and sear on both sides until they are golden brown. This should take about 3-4 minutes per side. Remove the seared chicken from the skillet and set it aside.

Prepare the Gravy:

  • In the same skillet or Dutch oven, add diced onions, drained mushrooms, and minced garlic. Sauté until the onions become translucent.

  • Return the seared chicken to the skillet.

  • Add 1 cup of chicken broth, water, browning seasoning, salt, and pepper. Stir well to combine all the ingredients.

Bake in the Oven:

  • Cover the skillet or Dutch oven with a lid or foil.

  • Place it in the preheated oven and bake for about 45-60 minutes, or until the chicken is cooked through and no longer pink in the center. The exact cooking time may vary depending on your oven and the size of the chicken pieces.

Create the Gravy:

  • Remove the skillet or Dutch oven from the oven and place it back on the stovetop.

  • In a small bowl, make a corn starch slurry by mixing the corn starch and water until smooth. Stir this slurry into the skillet to thicken the gravy. Adjust the thickness as desired.

  • Stir in 1 cup of cream and cook on low heat until the gravy is heated through.

Serve:

  • Serve the chicken with the mushroom and onion gravy over cooked rice, mashed potatoes, or noodles.
